I have to tell you guys about last night. If you read my post yesterday, you know that I was having a little bit of a hard time figuring out what to make for dinner last night. I eventually decided on Jenna’s Engagement Scampi which is ironic because on Sunday when I started looking for recipes that was the first one I stumbled upon and should have just stopped looking there.
It was SO good. I put my own little healthy spin on it and made it with whole grain angel hair pasta and served it with a multi-grain Italian baguette.
A couple of years ago when I first discovered the world of healthy living blogs, Jenna’s was the first I found. I read hers every day and was so happy to see that I wasn’t alone with my love for health and fitness. Once I realized there was a whole entire community of people like me, blogging about their everyday lives, I fell in love with the healthy living blogging community. So it was pretty fitting that I found my recipe of success on her blog. She knows what she’s doing in the kitchen! And if you’re ever looking for a good recipe to impress someone with, I highly recommend the shrimp scampi. It was easy to make and Nick loved it!
And of course, no meal on Valentine’s Day is complete without a little vino.
