This morning when I woke up I felt even worse than I did yesterday. I immediately ditched my early morning workout plan and slept a little longer, willing my sickness to go away.
It didn’t. So I chugged some water, popped two DayQuils and said a little prayer to feel better for the rest of the day. I’m currently on my third Ricola drop and working hard to get this sore throat away!
Since I skipped my intended workout this morning, I’m hoping to get to the gym after work if I feel up to it. Last night I kept it simple with just 40 minutes on the elliptical followed by a quick little circuit that looked like this:
- 20 crunches
- 20 scissor kicks
- 10 push-ups
- 1 minute plank
Repeat two more times for a total of 3 rounds!
After we got home from the gym, I was feeling adventurous in the kitchen and decided to give cinnamon peanut butter chickpeas another go. The last time I made them, they were a little mushy so I doubled their cooking time and they came out great! I tossed the chickpeas in peanut butter, honey and cinnamon.
This morning, I layered them in a jar with some vanilla Chobani and a banana for a quick and easy breakfast. It was definitely a nice change from my typical green monster breakfast!
Cinnamon Peanut Butter Chickpeas
- 1 can of drained and rinsed chickpeas
- 2 tbsp peanut butter
- 1 tbsp cinnamon
- 1/4 cup honey
Preheat the oven to 375. Drain and rinse chickpeas in a colander. Cover a cookie sheet with aluminum foil and lay the chickpeas flat. Bake for 45 minutes. Remove chickpeas from pan and toss with peanut butter, cinnamon and honey until fully coated. Enjoy!
Time for me to get to work! I’m working longer days this week in order to take some time off on Friday. A group of Nick’s friends are flying in for his birthday and one of my best friends is coming as well. I’m so excited to celebrate with them this weekend!
