For me, there’s nothing that screams summer more than grilling out. I grew up in a household that grilled from June to September and I’ve always associated grilling with summer! So many of my favorite childhood memories involve cookouts with neighbors and friends at my parents’ house. One of the nice perks of living in Florida is that grilling is always available because it’s so hot all year long, but it’s just a little bit better during the summer. It’s just one of those things!
With that said, tonight I grilled us a dinner that is, in my opinion, summertime perfection. BBQ chicken, asparagus, corn and tomatoes with salt was on the menu tonight and it was so good. I love how easy grilling makes my life. Here’s the final product:

The past two days have been very stressful at work. We’re just super busy and I’ve been working late the past few days. I know I’ve talked about this before, but keeping with my healthy habits is one of the thing that helps keep me sane during stressful times. I’m such a creature of habit that it help to have a few normal parts of my day around when some things just go crazy. Tonight after work I headed to the gym for some cardio and arm work. After yesterday’s HIIT session, I was in the mood for easy cardio so I hopped on the elliptical for 30 minutes. I followed it up with this workout before heading home.
I also managed to sneak in some really good food today. Breakfast was a super peanut-buttery green smoothie. I put about 3 tbsp of peanut butter in my smoothie and it was so creamy and SO good.
I was at a client’s office from 9:30 – 12, and by the time I got back to the office, I knew that leaving for lunch wasn’t going to happen for a few hours. Thank god for office snacks! I inhaled an apple and a peanut butter Luna protein bar as soon as I got back before leaving at 2:30 for lunch.
Sorry for the repeat picture, but that is literally the exact snack I eat every morning, so I’m proably never going to photographit again. ;)
When I was driving home, all I could think about was more peanut butter. I was in the mood for a sweeter lunch, so I put together a delicious yogurt bowl. In the mix: plain greek yogurt, peanut butter, honey, blueberry granola, walnuts and a banana. I want to eat this every day!
I’m going to spend the next hour mindlessly playing on Pinterest and de-stressing. My brain needs a little bit of a break. At least we’re almost halfway through the week! :)
