Today was a good day. Nothing spectacular happened, but it was just one of those days where I felt like I was doing exactly what I should be doing at every moment. Some days I get caught up in dreaming about the future and thinking of my long-term goals and what I should be doing to achieve them. Like group exercise classes. I want to teach group exercise and one day have my career in fitness full-time. I do love my job in advertising so I’m not in any rush to get there, but I think about it a lot. Sometimes it’s nice to stop focusing so much on the future and just live in the moment, you know?
Now that that little tangent is over, let’s get to the good stuff. Today was another HIIT day and my workout consisted of 40 minutes of HIIT (with 10 minutes of cool-down) and upper body strength. I rounded it out with abs before calling it a day.
All three of my main meal are noteworthy, but I want to talk about dinner especially. It has been pouring down rain since about 4 PM today, but I didn’t let that stop me from grilling up a Mediterranean veggie bowl. This was SO easy and SO good.
I grilled zucchini, peppers, onions and tomatoes after drizzling olive oil over them. I also grilled pita bread and then drizzled Italian salad dressing over it all. I added feta because, let’s be real, every Greek-inspired meal needs feta. This dinner was so easy and so good.
Lunch was a good one too – a huge protein pancake with lots of melty peanut butter and jelly.
I got a new jar of protein powder – Growing Naturals vanilla – in the mail today to use in my smoothies and decided to give it a whirl in protein pancake form. Um, life-changing. I’ve always liked protein pancakes but never loved them, but I must have been using the wrong kind of protein! Before they would have a weird after-taste and taste pretty chalky, but not today. Let’s hope it wasn’t just a fluke and I can recreate this baby for breakfast tomorrow!
Speaking of breakfast, I’m still on a smoothie a day kick thanks to my new Vitamix. This morning’s mix was 2 cups of frozen berries, 1 1/2 cups almond milk, a cup of plain greek yogurt and a ton of spinach.
Oh, and this is glass #2. I need to invest in some larger cups that will fit my smoothies. Lately I’ve been double-fisting or chugging straight from the blender and it is not as fun as you would think. Funny, huh?
I’m also on a peanut butter kick (well, moreso than usual) and think it’s time for a nice little bedtime snack of peanut butter and chocolate chips. There’s no better way to end the night!
